Chilhuacle Negro is a dark chocolate brown chili pepper known for its rich, spicy flesh, making it an essential component of the traditional mole negro from Oaxaca, Mexico. When fully ripened, the medium-sized, tapered bell-shaped fruits exhibit a deep purple interior. Due to their thin walls, they dry quickly and easily. The heat level of these peppers is comparable to or slightly exceeds that of cayenne peppers, and they are particularly flavorful when roasted over an open flame, enhancing salsas or moles, or adding zest to stir-fries. They can also be ground into a powder for use similar to other hot pepper powders, offering a uniquely fruity flavor that may evoke notes of molasses or raisins.
